What's Happening in Our Wine Department

 Major Market is pleased to introduce the New Las Olas Winery.   Las Olas being Spanish for "The Waves" is a brand new winery from the Sonoma County that reflects California's active beach and ocean lifestyles.  The Las Olas winery also supports charities that maintain the preservation of the Coastal Marine Environment.  With a trendy label this wine makes for a fantastic experience.  Las Olas is available at both your Major Market locations in Fallbrook and Escondido.

2007 Sauvignon Blanc

Grape Sourcing

Grapes for our Sauvignon Blanc were selected primarily from vineyards in the Central Coast, including San Lucas, the Paso Robles region and Santa Barbara County. In these growing areas, bright, sunny days and wide day-to-night temperature swings allow the grapes to spend extra hang time on the vine. This allows grapes to reach full ripeness, creating wines with complex flavors balanced by crisp acidity. Grapes from the Dry Creek Valley provide additional rich flavors and add complexity to the wine.

Winemaking

The wine was fermented in stainless steel without the use of any oak and with neutral yeasts, to preserve the aromatic and floral aromas and capture the essence of the Sauvignon Blanc fruit. The palate of grapes from various coastal regions in the wine provided a full spectrum of Sauvignon Blanc varietal characteristics, ranging from melon and fig flavors to lemon grass and zesty citrus.

Varietal blend: 100% Sauvignon Blanc

Sommelier Notes

This wine displays classic Sauvignon Blanc characteristics, with aromas of fresh honeydew and citrus fruits that carry through to the palate. With its fruity, aromatic flavors, this wine pairs especially well with fish, like salmon and halibut, and also with light pasta dishes. It also would match very well with fresh fruits and cheeses, which would help to highlight its complex taste.

 

2007 Chardonnay

Grape Sourcing

Grapes for our 2007 Chardonnay were chosen from across California’s best coastal growing regions, known for producing Chardonnay with excellent acidity and balanced flavors, including select Central Coast appellations, Mendocino County and Sonoma County.

Winemaking

The grapes were harvested at maximum ripeness while still maintaining optimum acidity levels.  While the majority of the blend was fermented in stainless steel, a portion was barrel fermented, contributing a creamy toastiness to the finished wine.  A portion of the blend underwent Malolactic fermentation, adding richness and complexity.  A small amount of Sauvignon Blanc contributes crisp melon and floral notes to the blend. 

Varietal blend: 99% Chardonnay, 1% Sauvignon Blanc

Sommelier Notes

Our Chardonnay displays textbook varietal characteristics, with golden straw color; golden apple and citrus flavors, medium body, and a crisp yet smooth finish. With its smooth texture and crisp acidity, the wine is an excellent choice for before dinner, and pairs magnificently with a wide array of appetizers.  It moves into a meal with ease, matching well with grilled or broiled fish and seafood as well as poultry dishes.

 

2007 Merlot

Grape Sourcing

Grapes for our 2007 Merlot were selected from among the best coastal growing regions in California, mainly from Central Coast, Sonoma County, and Lodi appellations.   In these areas, warm sunny days provide optimum grape ripening, while Pacific Ocean fog create cool nights and maintain the acidity in the grapes, resulting in a balanced Merlot full of flavor.

Winemaking

After harvest, the fruit was handled gently and fermented in stainless steel to preserve the fully fruit flavors in the grapes.  After the blend, a portion of the blend was oak aged to add subtle toast and vanilla accents. 

Cabernet Sauvignon provides structure and richness to the blend, along with additional rich dark fruit flavors and a touch of spiciness.

Varietal blend: 77% Merlot, 22% Cabernet Sauvignon

Sommelier Notes

Our Merlot is a rich garnet color, with flavors of black cherries, plums, and figs, with a soft, smooth finish. With its crisp acidity and ripe fruit flavors, this wine is an easy match with a wide range of main courses, including meats, pasta and vegetarian dishes.

 

  2006 Cabernet Sauvignon

Grape Sourcing

Our Cabernet is a dark crimson color, with ripe berry and plum aromas, accented by toasty oak and vanilla. On the palate, silky tannins and a lingering finish balance dark fruit flavors. Grapes were chosen from across California’s best coastal growing regions, known for producing Cabernet with rich, concentrated fruit flavors and balanced complexity.

Winemaking

Grapes for this wine were handled gently to minimize bitterness and fermented warm to maximize color and flavor extraction.  The firm structure of the Cabernet was tempered with the Petit Verdot, which added suppleness and juicy red berry fruitiness. The wine was aged one year in new and used American and French oak. 

Varietal blend: 75% Cabernet Sauvignon, 12% Petit Verdot

Sommelier Notes

The wine is full-bodied and complex, displaying classic Cabernet structure and finesse.  A memorable pairing is with roasted and grilled meats such as leg of lamb, prime rib, or porterhouse steak.

· We are very proud to work with our partner winery, Sonoma Wine Company. Sonoma Wine Company provides contract wine production, including custom crush, winemaking, bottling, control label development, and storage of barrel, tank and finished goods. Here are a few facts about the SWC facilities.

· 3 million gallons of wine stored in tank or barrel

· Grapes for our Sauvignon Blanc, Chardonnay, Merlot, and Cabernet are sourced primarily from Sonoma County and the Central Coast.

· We teamed up with California artist Robb Havassy in helping us develop a soulful, ocean minded label. His devotion to the preservation of the coastal marine environment goes hand in hand with our own. You can view his artwork at www.HavassyArt.com
