FALLBROOK — As guest speaker at their weekly luncheon meeting, highlighted by the finest prime rib-eye from Major Market, Sam Logan covered the finer points of beef with the Rotary Club of Fallbrook.

Detailing the USDA grades of beef from standard to select, choice and prime, Logan went into the various cuts of meat, what part of the cattle it comes from and how and why it fits into the grading system.

He also commented as he went along about preparation and cooking the various cuts  and grades.

Logan, who sells only Chairman’s Reserve prime and choice Certified Premium Beef at the Major Market stores in Fallbrook and Escondido, held everyone’s attention as he covered the cow, its parts, quality and grade and who sells what in the marketplace and what cuts the better restaurants are most likely to use.
